Thanks to initiatives like this, Iberian Ham continues to cross borders and is already exported to ninety countries on five continents, reaching international consumers increasingly familiar with the product, with your enjoyment and with its identification and labeling system that guarantees each of the pieces that goes on the market.
To move absolute transparency and consumer confidence at the time of making your purchase, the Iberian sector, from the hand of ASICI, has driven ITACA (Identification system, Traceability and Quality), a digital system that supports the complete traceability of Iberian productions, "From the field to the table" and positions the Iberian as a benchmark in terms of quality assurance, transparency and trust.
In this way, depending on the race (100% Iberian, 75% O 50% Iberian breed) and food (bellota, field bait and bait), the traceability system assigns each piece a mandatory seal, unique and individual, that guarantees that this ham is indeed Iberian. The consumer should only pay attention to the seal of the Iberian Quality Standard, with ASICI logo, and its color to know which category of Iberian Ham you are buying. There is no room for doubt. The hams or shoulders that carry any of these four seals are Iberian.

Among the Iberian products on the market are also the productions of the existing PDO in Spain, whose hams and shoulders are identified with their own seals, respecting in any case the same colors for each category, and whose traceability is managed by the Protected Designations of Origin themselves.
